Andy, Jude and I went to my parents’ house last weekend to celebrate my mom’s birthday and bake hundreds (if not a thousand or more) Christmas cookies. I am the taste tester. I taste the candies that go into some of the cookies, the dough and the finished product. I ate so much junk food that weekend that I have lost interest in eating the cookies we brought home.
My new favorite thing this year was the toffee. We had never made it before. Here is the recipe:
1 cup butter (salted)1 cup white sugar
1 cup semi sweet chocolate chips
1/4 cup chopped pecans
Combine butter and sugar in heavy 2 quart sauce pan and cook over medium heat stirring with wooden spoon occasionally until candy reaches 300 degrees F (maybe 25-30 minutes). Quickly spread on 15-20 inch jelly roll pan. Sprinkle chocolate chips over hot candy. Let stand 5 minutes. Spread chocolate over candy. Sprinkle pecans.
Then you’ll never guess what happened while my mom was holding Ivan. He started sucking on her face and she got him off as soon as she could, but still ended up with a hickey. That brings the number of hickeys that 6-month old Ivan has given to 2. Crazy!
